Alongside Chef Palmer is Chief Culinary Director, Thomas Bellec, a classically trained and French chef whose culinary pedigree mirrors Palmers’, infusing classic techniques with an unrivaled passion for showcasing a region’s unique and hyper-local flavors and ingredients.

Culinary Lobby
The gateway to the guest experience, our lobbies are more of a residential kitchen and entertaining space than a registration desk.
The Appellation lobby is activated with culinary stations - bringing the heart of the kitchen forward into the living space and inviting guests to interact with culinarians. From their first moments of arrival, guests engage with our culinary team and get an unprecedented view into the artistry of their work.
Each lobby is localized through architectural and environmental design, integration of local artisans and craftspeople, indigenous ingredients, and cuisine.
Demonstration Kitchen
Our private event spaces flourish with the activity of our culinary team in full view via our Demonstration Kitchens. Guests observe the level of care and precision that goes into preparing each dish and have an opportunity to interact with the culinarians. Their senses are enticed by the sights, sounds, and scents emanating from the cutting boards, ranges, and ovens.
The culinary team is approachable and connected to the event when desired and separated by privacy doors when not.
Appellation Demonstration Kitchens are equipped with digital recording capabilities so that the experience can be shared or remembered in real time or again and again in the future.

We source our ingredients from our Appellation gardens and our favorite farmers, ranchers and artisans, all whose missions we support as a testament to the vibrant flavors, authenticity, and the strong sense of community that define our regions.
Culinary Gardens
Our kitchens operate comprehensive farm- and garden-to-table programs. In the spring and summer, taste mouthwatering fruits and vegetables, like juicy citrus fruits, including finger limes, meyer lemons, and tangelos. Late summer and fall brings bursting stone fruits–peaches, nectarines and more, heirloom tomatoes and juicy cherries. In the cooler months, zesty greens, cauliflowers and broccolis, bedeck our plants.
