Appellation is born from an elegant merger of the culinary and hospitality worlds.

Our Brand Hallmarks

Three key hallmarks rule our conversation and root our manifesto.

These signs of excellence drive everything that we do and provide our foundation.

“Culinary excellence, access to world-class artisans, and a sense of place aren’t just part of the guest experience, they are the guest experience.”

What does it mean to know a place? How do shared experiences bond us together? How does the food of a place shape its culture? One way or another, these questions have shaped the careers of our co-founders Charlie Palmer and Christopher Hunsberger.

More than twenty years ago, Charlie and Christopher started working on their first hotel project together.  Nearly five dozen hotels, 20 Michelin stars, and multiple James Beard Awards later, they decided to start a truly new type of hospitality company.  One where culinary excellence, access to world-class artisans, and a sense of place aren’t just part of the guest experience, they are the guest experience.

Appellation is an innovative force for good that grows talent and inspires new, lasting relationships. Really, it’s about bringing people together, without barriers, to harvest and celebrate local bounty and foster community.

Cultivating great destinations is a collaboration. The team at Appellation starts with specific places they love and cherish, where they unite with local legends, artisans and masters of their craft to define and express a collective spirit and culture. Guests are invited to engage, ask questions, get involved, and learn something new as they create new connections to and memories of a uniquely special place.
